Flax Meal Mug Cake
Weekends are usually cheat days for me, but this cloudy Saturday morning, I want to share you this easy to make recipe that's good for breakfast and snacks. It's also in lieu of my one word this year which is SIMPLIFY, especially that I almost, always carry Elijah with me in and out of the house, I have no time to complicate things.
Look at that! Yumyum!!! I got this recipe on Instagram but tweaked it to suit my taste buds and so I could claim this as mine. haha
Here's what you need:
4 tbsp oat flour (buy regular oats and grind with a blender)
2 tbsp flax meal
1 tbsp agave (or any sweetener you like)
1/4 tsp baking powder
3-4 tbsp almond milk
1 tbsp walnuts
> Mix all dry ingredients in a mug, followed by almond milk and agave. You may add mashed bananas too.
> Microwave for 2 minutes
> Eat while still warm; You may add some toppings too like almond butter or Nutella (for my husband)
* I only scooped the cakes and placed them on a plate for picture purposes.
Love this for breakfast!!! So delicious and nutritious too!!
